White chocolate

White chocolate is a variation of milk chocolate where only the fat from the cocoa bean is used but not the cocoa mass. The result is an almost white chocolate with a rich vanilla and milk flavor and not a strong cocoa flavor.

Within EU we have rules regarding products sold as white chocolate. They decide how much cocoa butter it has to contain to be allowed to be called white chocolate. White chocolate is very heat sensitive and should not be melted. It is said that white chocolate is the most luxurious kind of chocolate there is and therefore it is an expensive chocolate.
