Rhubarb Muffins with chocolate to hide

Quick and easy to bake these tasty muffins with interesting fillings.

14 medium-sized

  • 75 g butter electricity margarine
  • 1/2 cup cream, optional
  • 2 ½ cups granulated sugar
  • 1 teaspoon vanilla
  • 3 eggs
  • 3 ½ cups flour
  • 1 ½ teaspoons baking powder
  • about 3 rhubarb stalks
  • 100 g dark cooking chocolate

Decoration:

  • 2 tbsp icing sugar

Oven 225 °

To do this:

  • Melt the butter in a saucepan.
  • Let it cool.
  • Add the cream.
  • Stir in sugar, vanilla sugar and eggs.
  • Mix flour and baking powder into a bowl.
  • Add flour mixture to the pan.
  • Mix to a paste.
  • Fill muffin cups 2/3 full with batter.
  • Peel and slice the rhubarb finely, chop block chocolate coarsely.
  • Add some rhubarb slices and a little chocolate hack into each muffin mold.
  • Bake in middle of oven about 15 minutes.
  • Let the muffins cool for a tea towel.
  • Dust with icing sugar.
